September Healthy Highlights #3: Apple Pizza

Did you ever wonder why apples float? Well, it is because they are approximately 85% water. Other fun facts about apples are that the star-shaped bottom of an apple is called its calyx and the average apple contains 5 seeds. Apple pizza is a fun recipe to go along with these fun facts. Apple Pizza

Crust

2 cups rolled oats

¾ cup walnuts, shelled

1/3 cup whole wheat flour

1/3 cup coconut sugar

½ tsp. ground cinnamon

¼ tsp. fine sea salt

½ cup coconut oil, melted

 

Filling

½ cup coconut sugar

2 TBSP whole wheat flour

1 tsp. ground cinnamon

4 medium granny smith apples, peeled and cut into ½ inch slices

 

Topping

1/3 cup whole wheat flour

1/3 cup rolled oats

¼ cup coconut sugar

1 tsp. ground cinnamon

¼ cup butter, cold and cut into small pieces

 

Caramel Sauce

1 cup medjool dates, pitted and cut in half lengthwise

4 TBSP milk or plant-based milk

¼ cup almond butter

¼ tsp. vanilla bean powder

¼ tsp. fine sea salt

 

Preheat oven to 350 degrees.  

 

To make the crust, place oats, walnuts, flour, sugar, cinnamon, and salt into blender canister. Pulse in short intervals, scraping the sides of the canister as you go, until well combined. Add the melted coconut oil and blend again until fully incorporated. Allow dough to cool in the fridge for 10-15 minutes. Once cooled, roll out dough on a piece of wax paper then transfer to 12-inch pizza pan. Pat dough to slightly build up the edges, then pinch or flute the edge all the way around.

 

To make the filling, place sugar, flour, and cinnamon in a large bowl. Whisk to combine. Toss apple slices in the mixture until they are thoroughly coated. Arrange the apple slices in a single layer in a circular pattern to completely cover the crust.

 

To make the topping, place flour, oats, sugar, and cinnamon in a small bowl. Whisk to combine. Cut in the butter until crumbly. Sprinkle topping over the apples until they are completely covered.

 

Bake pizza in the oven for 30-35 minutes, until the apples are tender.

 

While the pizza is baking, you can make the caramel sauce. Soak the dates in hot water for 10-15 minutes. Drain the dates then place them in the blender canister. Add milk and blend until a paste is formed. Add almond butter, vanilla, and salt and blend until smooth. Add additional milk if necessary to achieve the desired consistency. Scoop about half of the caramel into a ziplock sandwich bag. Snip corner off the bag then, once the pizza is removed from the oven, immediately drizzle the caramel sauce over the top. Serve warm. 

 

Cover and save the extra caramel in the fridge for up to a week.
