July Healthy Highlights: Baked Peach French Toast

Peaches are a naturally sweet, juicy, and delicious summertime fruit. A medium peach contains approximately 50 calories, 2 grams of fiber, and is a great source of B-complex vitamins, potassium, vitamin A, and vitamin C. Peaches can be added to smoothies, yogurt, cottage cheese, oatmeal, salads, or incorporated into a variety of recipes like the one shared here.

Baked Peach French Toast

Butter or coconut oil for greasing baking dish

1 loaf crusty multigrain bread

8 large eggs

2 cups milk

½ cup heavy whipping cream

¼ cup maple syrup

1 TBSP pure vanilla extract

6 ripe peaches, peeled and cut into ½-inch thick slices

½ cup sugar (or coconut sugar)

2 TBSP ground cinnamon, divided

Coat 9” X 13” baking dish with butter or coconut oil. Tear the bread into 1-inch chunks and place bread tightly together in one layer in the baking dish.

In a medium bowl, whisk together the eggs, milk, cream, maple syrup, and 1 tsp. of the cinnamon. Pour half of the liquid over the bread, ensuring all of the bread has been covered by the liquid.

Arrange peach slices on top of bread to cover. Pour remaining egg mixture over the peaches. Cover tightly with plastic wrap and store overnight in the fridge.

When you’re ready to bake, preheat the oven to 350 degrees F. Remove plastic wrap from baking dish. Mix sugar with the remaining cinnamon and sprinkle evenly over the peaches. Bake for about 45 minutes to an hour. Remove from the oven and let rest for 5-10 minutes. Cut into individual portions and serve with warm maple syrup.
