Game Day Recipe: Sweet Potato Nachos

Nachos are an essential part of any game day gathering. Sweet potato nachos offer a unique twist to this classic fan favorite appetizer. Replacing the tortilla chips with sweet potatoes adds a boost of fiber, vitamins, minerals, and antioxidants to your football feast.
This deliciously easy recipe is sure to keep your guests cheering. To build the nachos, layer the baked sweet potatoes with the prepared beef, beans, and cheese. Then top with chopped tomato, avocado, and green onions.
For a vegetarian option, replace beef with cooked lentils or double up the beans by layering on canned pinto beans and black beans before topping with cheese.
Sweet Potato Nachos
Serves: 10-12
Olive oil cooking spray
3-4 sweet potatoes (about 2-pounds), peeled and thinly sliced into ¼-inch thick rounds
1-pound extra lean ground beef
½ yellow onion, chopped
½ tsp. salt
1 tsp. paprika
1 tsp. chili powder
1 tsp. garlic powder
½ tsp. onion powder
1 (15-ounce) can of black beans, rinsed and drained
8-ounce bag of shredded cheddar cheese
2 Roma tomatoes, chopped
2 small avocados, chopped
4 green onions, chopped
Serve with additional toppings of choice like salsa, corn salsa, pickled jalapenos, and sour cream
Instructions
Preheat oven to 425 degrees F. Line two medium baking pans with aluminum foil. Spray foil with cooking spray. Evenly arrange sweet potato slices in single layer on each prepared baking pan. Spray potatoes with cooking spray. Bake for 10 minutes. Using a spatula, turn over the sweet potato slices, lightly spray again with cooking spray, and return to the oven to bake for another 10 minutes or until crisp.
While the potatoes are baking, heat skillet over medium heat. Add beef to the skillet. Use a spatula to break up the meat into smaller pieces as it cooks, ensuring even browning. Add onion to the skillet and season mixture with salt, paprika, chili powder, garlic powder, and onion powder. Continue cooking the beef until browned all the way through, about 10-15 minutes. Drain any fat from the skillet and set skillet aside.
Remove pans from the oven. Cover potatoes evenly with seasoned beef, black beans, and cheese. Return pans to the oven and bake for 2-3 minutes, or until the cheese melts. Remove pans from the oven and top with chopped tomatoes, avocado, and green onion.
Use a spatula to serve the nachos. Add additional toppings if desired. Enjoy!
