Peaches are a type of stone fruit. Stone fruit means that the juicy flesh surrounds the stone or pit, which houses the seed. Peaches vary in color, size, and shape. When buying fresh peaches, look for peaches that have unwrinkled skin that is a nice yellow-orange color. Use your whole hand to gently squeeze the peach to ensure it has a slight give to it rather than being firm.
Peach Chia Seed Pudding
makes about 2 cups
1 ½ cups milk of choice (recommend whole milk or full fat canned coconut)
2-4 scoops collagen powder (optional for added protein)
½ cup chia seeds
2+ Tbsp maple syrup (taste and adjust as desired)
¼ tsp. almond extract
2 ripe peaches, peeled, and finely diced (can also puree; may substitute ½ cup canned
peaches)
Whisk together ½ cup of milk and collagen powder, if using until smooth. Then add remaining milk, chia seeds, maple syrup, and almond extract. Whisk until no clumps remain. Store in fridge for at least 4 hours or overnight. After chilling, stir with a fork until well mixed. Add diced/pureed peaches and stir to mix. Can also layer chia seed pudding, then diced peaches for more of a parfait.
