November Healthy Highlights #1: Cranberries, A Festival Holiday Fruit

Cranberries are a seasonal food that can be purchased fresh from October through December. The beautiful red color of cranberries makes them stand out on any holiday table.

Fresh cranberries are nearly 90% water and are comprised of carbohydrates and fiber. Cranberries contain both soluble and insoluble fiber, which can aid in digestive health. Cranberries contain a high amount of antioxidants and are a rich source of vitamins and minerals. One cup of fresh cranberries meets 25% of your daily vitamin C requirement, 16% of your daily manganese requirement, 8% of your daily vitamin E requirement, 7% of your daily copper requirement, and 6% of your daily vitamin K requirement.

Fresh Cranberry Relish

2 cups fresh cranberries

1 granny smith apple, sliced

1 large orange, peeled, sectioned, and finely diced.

Instructions

Add cranberries and apple slices to a food processor and pulse until coarsely chopped. Pour into a medium-sized bowl and mix with the diced orange. Serve chilled.

Notes

Cover and save leftovers in the fridge for up to 4 days.
